Szef Kuchni/Head Chef
For our Client, PREM Group, an international hotel management company, we are looking for experienced, motivated and ambitious candidates for the position of Head Chef at Holiday Inn Łódź We are seeking applications from professional individuals with high levels of drive and determination who are interested in becoming part of the Management Team of Holiday Inn Łódź. Candidates must have previous experience on that position and pre opening experience would also be an advantage. Basic function: Reporting to Operations Manager and General Manager Head Chef will work with Food & Beverage Manager to achieve the smooth running of the kitchen, achieving standards set down in the standard of performance section and budgeted food gross profit. He/She will also concentrate on hygiene within the department to achieve legal and company requirements. Scope of duties: - To prepare weekly rosters and respond positively to daily changes to ensure coverage in relation to business demands and the hotel wage budget
- To train and develop all staff by ensuring an active monthly training plan is in place
- To maintain, review and update manuals and department training records
- To monitor training needs and training programs /objectives of trainees within the kitchen as required by the hotel policy
- To ensure consistency of food production and presentation in accordance with the company’s standards
- To be familiar with nominated suppliers and order in relation to business levels not exceeding agreed stock holding levels and costs
- To be specifically responsible for hygiene ensuring the full implementation of cleaning schedules by the kitchen team
- To contribute ideas for new menus and food promotions which meet hotel standards and are in line with customer demand and profit margin
- To maintain strict control procedures within the kitchen by achieving budgeted food gross profit taking positive action in the event of an adverse stock take
- To maintain a good working relationship with all other departments and staff within the hotel
- To ensure all staff are aware of the procedures to follow in the event of fire in line with the fire precautions act
- To delegate daily duties to all kitchen staff ensuring effective organization/coverage of breaks
- To ensure the opening and closing down procedures are followed with full regard to hygiene and security of the kitchen in line with the hotel policy
- To maintain a day book and submit accurate time sheets on a weekly basis in accordance with hotel policy
- To accept total responsibility for the department maintaining standards, productivity, staff discipline and staff development as required by the hotel policy
- To respond positively to any complaints ensuring customer needs are met.
